Creative Kitchen !

Sooooo today’s goal was to make my plate as colorful as possible !
And I did it (within reason)!

Meat of Choice ?

Popular chicken dishes include roasted chicken, fried chicken, chicken soup, Buffalo wings, tandoori chicken, butter chicken, and chicken rice.

For the eggplant I decided to soak it in natural rice vinegar and lemon juice while preparing other courses of the meal

I seasoned the chicken two different ways.

For one batch I seasoned the chicken with lemon pepper, garlic seasoning, poultry seasoning and Lawry’s

The second batched I added Paprika and Turmeric, base of the season same as the first batch.

Cooking:(I can not think of a better title for this lol)IMG_4137

sautéed the eggplant in the skillet with coconut oil and vinegar oil until soft.

(You can cook these to your like, if you prefer them slightly “tougher” cook them until they are slightly brown and still hold their shape)

For the yams I deep-fried them in coconut oil until soft or slightly burnt. (you can add salt to bring out the sweetness of the yams, also if you would like to dip them in rice powder before cooking, that taste good as well, mixed with a little salt)IMG_4138

The Brussels sprouts I steamed/boiled them in the left over yam oil and about a cup of water, cover the skillet and let cook until all of the water was evaporated

The Outcome :

So everything was amazing*.  The chicken was bomb , the yams were sweat and the eggplant was great !

All in all I give my meal made an 8**. It was a great meal that incorporated a lot of “different” food groups all healthy for the human body.

The meat was an added bonus, as it should be in any meal, and the veggies were the main course.

I am very happy with this dinner tonight !

I set a goal and accomplished it !

*least favorite was the Brussels sprouts. I had heard that they were not that great of taste but I thought I would give it a try.

**The reason I give it an 8 is mainly because of the Brussels sprouts. The next time I prepare them  I am going to chop them up and saute them with garlic, maybe add a little garlic salt in there.
